WHAT YOU NEED:
-Trader Joe's Garlic Spread -Breadcrumbs -Eggplant -Tomato -Fresh Basil -Burrata -Grated Romano OPTIONAL: -Trader Joe's Tomato Basil Creamy Pasta Sauce Slice eggplant into 1/4-inch to 1/2-inch thick rounds. Lightly salt. Spread Trader Joe's Garlic Spread onto both sides of each slice. Coat both sides with Italian breadcrumbs. (If working with plain breadcrumbs you can add in garlic powder, oregano, salt & Italian seasoning.) Spray with olive oil spray & place into air fryer in one even layer. (Might take a couple rounds.) Air fry at 450 degrees for about 7 minutes, flipping each slice halfway. (Optional) Spread Tomato Basil Creamy Pasta Sauce on each slice. Add tomato slices and a fresh basil leaf, then top with burrata. Air fry for a couple more minutes, until melted. Add romano and air fry until browned. Serve with pasta & garlic bread.
