2-Ingredient Pancakes

WHAT YOU NEED:
-1 Egg
-1 Banana

​
Optional:
​-Cinnamon
-Trader Joe's Pumpkin Pie Spice Seasoning
-Chocolate Chips
-Walnuts
-Peanut Butter Chips
-Blueberries
-Melted Peanut Butter (1 Tbsp microwaved for 30 seconds)


Easy cooking, easy cleaning. Mash a banana in a bowl, crack an egg over & whisk away. Pancake batter in a second! Add a dash of cinnamon & Trader Joe's Pumpkin Pie Spice for sweeter flavoring. You will be blown away with satisfaction!

TIP: Cook through all the way before flipping to maintain shape!

How to know when your pancake is ready to flip: Wait for bubbles to pop through or give the pan a little shake and see how wet the top of your pancake still is. If your spatula glides right under easily, it's go time!

WHAT YOU NEED:
-Chicken Tenders or Cutlet
-Flour
-Egg
-Italian Breadcrumbs
-Basil-Parmesan Oil
-Arugula
-Feta


Fruits (Pick and Choose):
-Watermelon
-Strawberries
-Blueberries
-Mango
-Grapes
-Peach
-Cantaloupe


Seasoning:
-Salt
-Balsamic Glaze


FOR CHICKEN:
Set aside 3 bowls.
One with flour.
One with whisked egg.
One with Italian breadcrumbs. (If working with plain breadcrumbs you can add in garlic powder, oregano, salt & Italian seasoning). 


Start with flour, then egg mix, and finish with breadcrumbs. Coat each side fully with each step. 

Heat oil of choice in your pan. I use a basil-parmesan oil. 
Cook through on both sides.

FOR SALAD:
Lay down a bed of arugula and drizzle with olive oil & salt.
Top with feta and fruit. (Fruit suggestions: watermelon, strawberries, blueberries, mango, grapes, peach, cantaloupe).
Finish with balsamic glaze.

Classic chicken parm!

WHAT YOU NEED:
-Chicken Tenders/Breast/Cutlet or Zucchini 
-Flour
-Egg
-Italian Breadcrumbs
-Olive Oil
-Tomato Sauce
-Shredded Mozzarella
-Grated Parmesan Cheese

Seasoning:
-Oregano
-Basil


I prefer chicken tenders over breasts or cutlets but any do this recipe justice.
Set aside 3 bowls. One with flour. One with whisked egg. One with Italian breadcrumbs. (If working with plain breadcrumbs you can add in garlic powder, oregano, salt & Italian seasoning). 
Start with flour, then egg, and finish with breadcrumbs. Coat each side fully with each step. Set aside chicken for cooking.
Heat oil of choice (I go for olive oil or avocado oil) on medium heat in a pan that will fit all of the prepared chicken. 
Cook chicken through on one side, flip, and begin cooking through other side.
Lower heat to around 4 or 5.
Add tomato sauce to pan. Sprinkle oregano and basil over sauce.
Sprinkle shredded mozzerella and grated parm.
Cover and heat until chicken cooked through completely. 

Zucchini is a great alternative for chicken if you're seeking a vegetarian dish!

Fried Rice with Seared Scallops

WHAT YOU NEED:
-Frozen Grated Cauliflower
-Olive Oil
-Scallops
-Egg
-Broccoli
-Crimini Mushrooms
-Red Onion
-Red Pepper
-Fresh Garlic
-Fresh Scallions
-Avocado
-Trader Joe's Everything but the Bagel Sesame Seasoning Blend

-Soy Sauce

​Add frozen grated cauliflower to a pan. Cook until dry. Remove from pan, keep warm in covered dish. Add oil to pan and sauté chopped garlic. Add your veggies (Pictured: broccoli, mushrooms, red onion, red peppers). Crack egg in pan and lightly spread to edges of pan forming fluffy scrambled like pieces. Add more oil and return rice to pan. Add soy sauce and scallions and stir fry. Push fried rice to side of pan and sear your perfect scallop while keeping rice heated. Stir everything together and you have your cauliflower fried rice ready to enjoy!

Seasoned Rice with Grilled Shrimp

WHAT YOU NEED:
-Frozen Grated Cauliflower

-Zucchini
-Crimini Mushrooms
-Avocado


Seasoning:
-Salt
-Garlic Powder
-Oregano
-Italian Seasoning
-Basil


Frozen grated cauliflower in a pan with very little oil. Cook until dry. Season with salt, garlic powder, oregano, Italian seasoning, and basil. Remove from pan, keep warm in covered dish. Grill veggies and shrimp with same seasoning. Add back cauliflower rice and stir fry before serving.

WHAT YOU NEED:
Cast Iron Pan
-Tater Tots
-Egg
-Olive Oil

My go to ingredients to mix & match with:
-Chopped onion
-Red pepper
-Broccoli
-Mushrooms
-Spinach
-Tomatoes

-Shredded cheddar
-Trader Joe's Sweet Apple Chicken Sausage
-Lox
-Avocado


​Seasoning:
-Salt
-Garlic Powder
-Oregano
-Parlsey


If anything is going to get you up in the morning, it's to preheat your oven and get yourself one step closer to your gourmet skillet breakfast. Pop some frozen potatoes, tots, shredded, whatever you like, in the toaster oven while you sauté some veggies in your cast iron pan. I use avocado oil and season with salt, garlic powder, and oregano. When your potatoes are cooked through, add them to the pan and push your ingredients together. Crack eggs on top, sprinkle parsley and spread cheese of choice over them. Bake for 10 minutes or until your eggs are cooked the way you like. Add spinach and tomatoes to already heated pan for a little sauté and plate with fresh avocado!

Quick, Easy & Simple Salmon

WHAT YOU NEED:
-Salmon Filet
-Oil


Seasoning:
-Salt
-Garlic Powder
-Oregano
-Thyme
-Italian Seasoning

Season the salmon filet with salt, garlic powder, oregano, thyme and italian seasoning. Spray pan with non-stick spray or oil of your choice and give it a few moments to heat up. Place filet seasoned side down on pan and allow it to cook until you see it is about halfway done. Flip and finish cooking through. If the sides of your filet remain rare, use the spatula to help guide each side direct heat. This flavorful yet simple salmon pairs nicely with a variety of dishes.

WHAT YOU NEED:
-Spring Roll Rice Wrappers

Ingredients I choose from:
-Shrimp
​-Chicken
-Chopped Lettuce
-Carrots
-Broccoli
-Cucumber
-Red Pepper
-Mushrooms
-Zucchini
-Spinach
-Hoison Sauce
-Peanut Sauce
-Ranch


Rice wrappers, brown or white, are the new wrap. Chicken caeser, raw veggies, sautéed veggies, grilled shrimp with chopped lettuce, the possibilities are endless. These spring roll wrappers are my new obsession. They start out hard and soften with a rinse of warm water. Collect your fillings & roll as the wrap softens and sticks into place! A fun meal to make and a low-cal substitute to hold your goods together. Experiment with dipping sauces as a flavorful pairing to this dish!
