WHAT YOU NEED:
-Chicken Tenders or Cutlet -Flour -Egg -Italian Breadcrumbs -Basil-Parmesan Oil -Arugula -Feta Fruits (Pick and Choose): -Watermelon -Strawberries -Blueberries -Mango -Grapes -Peach -Cantaloupe Seasoning: -Salt -Balsamic Glaze FOR CHICKEN: Set aside 3 bowls. One with flour. One with whisked egg. One with Italian breadcrumbs. (If working with plain breadcrumbs you can add in garlic powder, oregano, salt & Italian seasoning). Start with flour, then egg mix, and finish with breadcrumbs. Coat each side fully with each step. Heat oil of choice in your pan. I use a basil-parmesan oil. Cook through on both sides. FOR SALAD: Lay down a bed of arugula and drizzle with olive oil & salt. Top with feta and fruit. (Fruit suggestions: watermelon, strawberries, blueberries, mango, grapes, peach, cantaloupe). Finish with balsamic glaze.
